‘Great Cooks of the Desert’ takes us into the kitchens of five desert-dwelling home-cooks to find out what draws each person to the desert and to experience cooking great food under difficult conditions.
James Young is a local artisan who creates beautiful bespoke leather shoes and belts...he is also a cameleer. His idea of a family holiday is to travel across the deserts of Central Australia, with his partner, children and family dog on a wagon drawn by two camels. In keeping with his 'hand-made' ethos James also makes his own salami to take on the trip.
In this episode, we visit James during a salami-making session prior to his forthcoming camel wagon trip across the Tanami Desert.

Rebecca Cadzow lives on Mount Riddock station, 200kms north east of Alice Springs.
In addition to her daily tasks of cooking for the station crew, driving the road train, pregnancy testing cattle, mustering, looking after her garden and teaching new staff to handle horses - Rebecca also find times to enliven the daily menu with some home-made cheese .

Many Aboriginal people in communities around Central Australia still hunt for and eat bush foods. However as country changes with unseasonal weather events and the influx of non-native grasses, hunting bush foods becomes increasingly challenging.
